Paleo(ish) Pumpkin Cookies

IT'S FALL! (And in most states it FEELS like fall to!) To get the feeling of fall in my home, I've been burning my pumpkin candle, decorating with pumpkins, and finding some fun new pumpkin recipes! This recipe was shared with me by a friend. I have made a few of my own adjustments to the original recipe. Doesn't the pumpkin look so cute with the cookies? In typical basic white girl fashion, I love pumpkin everything (in case you couldn't tell)! This recipe makes 15 ice cream scoop- sized cookies.

 

Ingredients:

2 cups Organic Old Fashioned Oats

2/3 cup Pumpkin Seeds

2/3 cup Unsweetened Dried Cranberries

1/4 cup Chia Seeds

Sea Salt

Pumpkin Pie Spice

1/2 cup Pumpkin Puree

1/4 cup Organic Honey

1/4 cup Coconut Oil

2 eggs, beaten

Instructions:

1. Pre heat oven to 350 degrees.

2. Combine dry ingredients in a bowl. Mix.

3. Heat honey and coconut oil together on the stovetop or microwave. Add to the dry ingredients with pumpkin puree and eggs. Stir until evenly combined.

4. Scoop onto lined baking sheet. Pat down cookie to form. Bake for 15-20 minutes or until golden brown on the edges.

5. Allow cookies to cool before removing from baking sheet. Serve and enjoy!
