Lemon Salmon with Brussels Sprouts


Call me crazy, but one of my FAVORITE sides is brussels sprouts! I find that, when cooked right, they are delicious and filling. Brussels sprouts are found in the family of cruciferous vegetables (along with kale, cabbage, broccoli, cauliflower, and mustard greens). Cruciferous vegetables are are high in glucosinolate, which is a building block for cancer fighting substances. This week I paired my favorite salmon recipe with brussels sprouts. I'll focus on the brussels sprout recipe today because I feel like most people don't like brussels sprouts because they don't know how to cook them!

The salmon was sprinkled with salt, pepper, and garlic powder, placed in an oiled pan, and topped with lemon slices. Bake for 20 minutes at 375 F, and you have a simple, easy, paleo meal!

Next, is the brussels sprout recipe. Don't be scared by the browning/almost burnt appearance. The caramelization on the outside of the brussels sprouts keep them crispy and add a lot of natural flavor to this side dish!

Ingredients:

Brussels Sprouts; halved

Extra Vergin Olive Oil

Garlic Powder

Salt

Black Pepper

Instructions:

1. Toss brussels sprouts with oil and seasoning.

2. Bake at 375 F for 15-20 minutes (until desired darkness).

*I baked mine for 20 minutes for reference

3. Serve as side dish. Recommended topping; parmesan cheese.
