Paleo Pasta Dinner

After a long run and ab workout this afternoon, I was craving a filling, Italian dinner! This turkey meatball and zucchini pasta dinner is the perfect substitute for high-carb, high-calorie pasta! I recently got my KitchenAid Stand Mixer, so I'm overly looking for ways to use and photograph my mixer!

 

Ingredients:

1lb Ground Turkey

1/2 Small Sweet Onion

1 Handful fresh chopped spinach

1 egg

Red Pepper Flakes

Garlic Powder

Oregano

Basil

Italian Seasoning

Sea Salt & Pepper

Organic Marinara Sauce

3 small Zucchini

Instructions:

1. Heat oven to 350 degrees. Chop onion and spinach.

2. Place meatball ingredients in stand mixer. Mix well.

3. Add 1/2-1 tsp of each seasoning and mix thoroughly.

4. Roll mixture into 12 handful sized meatballs.

5. Place on lined baking sheet and cook for 20 minutes.

6. Prepare zucchini by using a peeler to peal thin slices of zucchini. Place in a bowl with a teaspoon of water. I also added some salt and pepper for taste. Microwave on high for 60 seconds to steam the zucchini. I recommend doing this step each time you wish to have a serving of meatballs.

This recipe made 6 servings for me- 1/2 zucchini and 2 meatballs for each serving.
